Back to work after a week vacation was brutal! My email looked like I was gone for a month. That’s what happen when you leave responsibilities to have fun… in the end it’s all worth it! So now, trying to get back into the routine of things. A few things through off my regular summer routine. For starters, my Son is taking summer classes this year… and our Weber charcoal decided that grilling was out of the question (we ordered a new one)! I better get my thinking cap on to get quick, easy meals that will not warm up the house… it’s summer after all!
Road Trip… Electric style!
After almost having our 2007 Impala for 10 years, major work needed to be put into it… again! Last time we did major repairs, I had told my husband that it was the last time we were putting that much money into the car. Next garage visit, we needed to make a decision. I had not planned that it would come this fast… wipers stopped working (good thing I was in the office parking lot, it was raining cats & dogs). If only it was just the wipers! So after much liberation, we decided to do it and purchased a new car… and go 100% electric!
Prep Day #43 – Lasagna Rolls
Is it just me or we often end up with left over boxes of pasta? There isn’t enough to make a meal so we are stuck having to get another box –and the circle begins again! For pasta like spaghetti or macaroni, it’s not as problematic since it is the most common pasta we use. What about lasagna noodles though? I always end up with not enough left to make another lasagna. Who said that lasagna noodles should only be used for staking? Let’s ROLL!
Siblings… why my Sister is the best!
Some of us have brothers, other have sisters. Some of us are blessed to have both. For me, if you would have asked me when I was young, I would have said that I had an annoying older sister, and it would have ended there. Chances are she thought of me as the annoying little sister! But why?
Life is short… take the time!
Do you recall when you were young, just before you started school? The days seemed long… getting easily bored. Your room was filled with toys, books & games but yet, you sat there crying that you had nothing to do!

Prep Day #42 – Spiralizer… a fun way to eat veggies!
For the longest time, my husband didn’t want to eat any zucchinis. He simply didn’t like it! No taste, the texture, everything about zucchini just did not appeal to him. So, I would simply not buy any… even if I did like it! All that changed the day I got my spiralizer!
