Prep Day #43 – Lasagna Rolls

Is it just me or we often end up with left over boxes of pasta? There isn’t enough to make a meal so we are stuck having to get another box –and the circle begins again!  For pasta like spaghetti or macaroni, it’s not as problematic since it is the most common pasta we use.  What about lasagna noodles though?  I always end up with not enough left to make another lasagna.  Who said that lasagna noodles should only be used for staking?  Let’s ROLL!

The beauty about this recipe is a little like my Pizza Casserole, you can roll them with anything you wish… as long you have something that will help the roll stick together.  For mine, I will be using ricotta cheese!

Today, I decided to use 5 ingredients (not taking in consideration the noodles).  To make my version, you will need:

  • 4 green onions
  • 1 tub of ricotta cheese (300g)
  • pepperoni slices (sliced in half)
  • 1 or 2  jars of Tomato Basil sauce –depending on how saucy you like it
  • Mozzarella –shredded to top off

The quantity of noodles depends on the number of meals you want to make.  I usually calculate 2 noodles/person if this is eaten as a meal.  Believe me, with all that cheese, 2 noodles are plenty to fill you up!  For today, I will be doing 9 noodles – 1 main meal & 1 lunch that will include a side salad.

Using the cooking direction on the box, cook your noodles until they are tender enough to be manageable.  Rince under cold water and strain properly.  Set aside.

Chop your green onions finely.  In large bowl, mix your chopped green onions & the ricotta.  Set aside.

If you can find slices of small pepperoni, you can use those.  I couldn’t find any at the store, so I got the large slices.  I will simply slice them in the middle to make halves.  Set aside.

At the bottom of your cooking pan, add some of the spaghetti sauce.  This will help prevent the noodles from sticking.

You are now ready to ROLL!

Using a clean cutting board, put your first noodle down.  Spread 1 – 2 Tbps of your ricotta mixture across 3/4 of the noodle.  The mixture will spread all the way as you will be rolling.

Add around 1 Tbsp of sauce across the noodle.  Put some pepperoni halves across.

Roll… Roll… Roll…VOILA!

Continue this way until you have done all of your noodles.

Add your sauce and sprinkle with the mozzarella cheese.  Cook in a 350 F pre-heated oven for 30 minutes.  If you wish, you put under broil for 2 – 4 minutes to make the cheese golden and bubbly.

Added the left over pepperoni on top of the cheese… soooo good!

Let rest for 5 minutes before serving.  This will help the cheese & noodles to set.  You can add garnish such has fresh basil or parsley to serve.  If you have a big appetite, you can serve with garlic bread & Cesar salad.

I make this when I have left over noodles.  However, you can make this for when you receive company also… it’s lasagna, served differently!
