The final school day bell has rung. The kids are happy that Summer is finally here. For our kids at home, schools out means no more homework, no need to wake up early in the morning, no more school uniforms and no need to pack school lunches… life is great during Summer!
Prep Day #14 – Loaded Baked Potatoes
Nothing is more versatile than a potato. You can have it baked, mashed, roasted, scalloped and lets not forget french fries. They can even be eaten in salad form. Let’s face it, potatoes do make a great side dish to any meal. How about we turn the potato into the main dish of our meal?
Prep Day #13 – Stroganoff Meatballs
It’s always nice to come home after a hard day at work and only have to heat up the main meal. It is also nice to have some left overs for later in the week.

Prep Day #11 – Chicken Chow Mein
Ever since we shifted our focus on losing weight, we haven’t eaten much pasta. Last time we ate some was when our neighbors came over for a meal. That was a few months ago. I agree, nothing is more comforting than having a nice plate of pasta covered in Italian meat sauce. Prep Day #10 – Bacon wrapped Meatloaf
Meatloaf, a childhood favorite. Growing up, I knew supper would be great when I would get home from school and smell my Mom’s meatloaf cooking in the oven. The best part of it was the tomato soup she would spread on top of it before putting it in the oven. Served with mashed potatoes and veggies, I remember how wonderful it tasted! Over the year, I have tried different meatloaf recipes. Some with rice, others with crumbled dry bread, with canned tomato soup and some with BBQ sauce. When it comes to meatloaf, the possibilities are endless. Now, it depends on the flavor I want to achieve but I always keep the same basics to get the perfect meatloaf!
