Autumn has really settled in and the cold weather is starting to show it’s face. Nothing says ”I love you” like a Home cooked meal. It is even better when it is comfort food… like a meatloaf. I did share in the past my Bacon Wrapped Meatloaf recipe, but this one is quite different. It will take care of, not only the meat lover of the household, but the veggie lover also!
The basis of this recipe is similar, except that this one has veggies inside. This recipe is done in 2 parts. In order to make this, you will need:
- 2 Lbs of ground beef
- 2 carrots
- 3 green onions
- 1/2 of a pepper (you may use any color you wish)
- 1 1/3 cup of bread crumbs (1 cup & 1/3 cup)
- 2 eggs
- 6 Tbps of Ketchup
- 4 Tbsp of BBQ Sauce ( I used Bulls-Eye)
- 2 Tbsp of dry Parsley
- Salt & Pepper
Part #1 – The Meat
Before you start, pre-heat your oven at 350°F. Start the meat preparation by mixing together your ground beef, eggs, 1 cup of bread crumbs, 3 Tbsp of Ketchup, salt & pepper.
Once all combined, on a foil lined baking sheet, spread your meat. It does not need to be spread evenly nor do you need perfect edges.
Part #2 – The Veggies
Set your meat aside and prepare your veggies. Chop finely your green onions and your pepper. Using a cheese grater, shred your carrots.
Using a large mixing bowl, add all of your veggies along with 1/3 cup of bread crumbs, your parsley and 2 Tbsp of BBQ sauce. Mix very well to combine together. Spread over the beef.
If you ever had a rolled cake, it is now the time to roll our meatloaf just like we would a roll cake. Using your foil to guide you, gently roll your meat, making sure you secure tightly the ends so the veggies stays in the middle. Take your time, no rush… at the end, you will end up with this:
Transfer your meat veggie roll to an oven safe greased pan.
The overall cooking time is 60 minutes. While this is cooking, in a small bowl, mix together 3 Tbsp of Ketchup with 2 Tbsp of BBQ Sauce. Once your meatloaf has been in the oven for 30 minutes, pour the sauce mixture on top and pop back in the oven for another 30 minutes.
Insure that you let your meatloaf rest a few minutes before cutting it.
While the meatloaf is cooking, you can take the time to cook a side of mashed potatoes or simply bake some store bought fries (we had ours with some herb covered potato wedges). This meatloaf is perfect for weekday lunches. It heats up very well and a good balanced meal.
The possibilities of veggies to put in the middle are endless. Let your imagination go and try with other variety of veggies!
