Peanut Butter Chocolate Cookies

Everyone needs a recipe that calls for few ingredients and that can be made in less than 30 minutes. If you love peanut butter and dark chocolate, this one is a keeper!

All you will need to make this recipe – other than dark chocolate for the drizzle, are the following 3 ingredients:

  • 1 cup of peanut butter (I used smooth but you can use crunchy)
  • 1/2 cup of sweetener (any low carb sweetener)
  • 1 egg

Before mixing ingredients together, take the time to pre-heat your oven to 400F.

In one bowl, using a hand mixer, mix well all of the 3 ingredients together.

Line a cookie sheet with parchment paper. To scoop the cookies into the paper, if you own a cookie scooper, go ahead and use that. If you don’t, you can use regular tablespoons. Divide your batter into 12 balls. Using a fork, press down your cookie dough to form a flat cookie.

Place your cookies in your pre-heated oven and bake for 12- 15 minutes or until your cookies are golden.

NOTE: No oven are the same and it is important when baking that you keep an eye on the baking progress. I always start with the lower amount of time and add time at 2 minutes increases until I reached baking perfection.

This will yield 12 cookies. Yes, I know, only 12 cookies! I still think that this is the best little recipe that you need to have in your back pocket because it can be made in less than 30 minutes. I can be whipped up in the event of:

  • You have unexpected visitors that call to say they will drop by
  • You want something sweet that will not cause you to eat desert for a week
  • You want to whip up something quick for a friend
  • You have a last minute invitation and want to bring something…

… and I could go on and on. It’s simply a nice to have in your recipe box.

Once your cookies are baked, leave them on the cookie sheet for at least 10 minutes. They will be soft to a point that they will break easily – I know, it happened to the first one I tried to remove from my sheet!

Place a parchment paper on your counter and put a cooling rack on top – this is to prevent you from having to pick up a mess from the chocolate drizzling. Transfer your cookies to the rack.

In the microwave, at 30 seconds interval, melt your dark chocolate. I used around 8 dark chocolate squares. Once melted, transfer into a Ziploc sandwich bag. Use the bag just like you would a pipping bag. Compared to a pipping bag, you’ll be able to cut the end smaller which will help you guide your drizzle. Have fun and drizzle any way you like.

There you have it… a quick and easy recipe to whip up in less than 30 minutes. The other plus side is that it does not create a lot of dishes… this way you have more time to enjoy the cookies and the company you are sharing with.
