Overnight Oats… 2 ways!

This week, I’m stepping a little aware from my ”KEPA” approach! Why? It’s easy… with the prices of food that keep increasing, I’m not about to discard things I have in my pantry. I did a pantry inventory and found that I had oats left over – overnight oats it is!

Although oats are not KETO friendly (because of their high carb content) and it’s divided on the PALEO approach, we decided to go ahead and add this to our meals this week… mainly for 2 reasons.

Reason #1 – We watch out net carb intake. Since one serving of overnight oats is around 25 net carbs, and we are allowed 35 net carbs per day, we just have to prepare out daily meal plan to incorporate other foods that are low in carbs that day.

Reason #2 – If is grows in nature and is eatable, we’ll eat it!

So what will you need to make overnight oats… other than oats? Not much actually. I’ll be giving you an easy way to create 2 tasty overnight oats, that will require only ONE BOWL!

We’ll be making PB&J overnight oats and chocolate overnight oats. So you will need for these 2 recipes:

  • 2 cups of oats
  • 2 cups of water
  • 1/4 of peanut butter
  • 3 Tbsp. of Honey
  • 4 Tbsp. of chia seeds
  • 2 Tbsp. of Cocoa powder (for the chocolate oats)
  • 2 Tbsp. of jam (for the PBJ oats)

To start, both oats recipe requires the same base, which is to mix your water & peanut butter together to create a milky texture.

Add you oats, honey and chia seeds and mix well together.

Let the mixture sit for a few minutes. This will give a chance for your oats to soak up all the peanut butter goodness!

You are now ready to start with your PB&J oats.

This will yield you 2 servings of PB&J & 2 servings of chocolate overnight oats.

Using small mason jars, pour in, 1/4 cup of the mixture in the bottom of your jar.

Add 1 Tbsp. of jam to each jar.

Top with another 1/4 cup of oats mixture.

Each jar contains 1/2 cup of oats.

Put a lid on, and pop in the fridge overnight!

We have one down… now let’s make the chocolate jars.

In your remaining mixture, add your 2 Tbsp., of Cocoa powder and mix well.

Speaking of cocoa powder, did you know that it only contains 1 gram of net carbs? It makes it for a very friendly KETO option for some desserts. Like a quick chocolate KETO mousse… I’ll have to try that!

Once your chocolate and oats are properly mixed together, pour in your jars!

These chocolate overnight oats are my FAVORITE! They are smooth, and taste AMAZING! Perfect for all chocolate lovers.

Once your jars are filled, pop a lid and put in the fridge overnight… hence why we call them overnight oats.

Next morning, enjoy a quick and easy, not forgetting filling breakfast! You can easily double or even triple this recipe to have some for the full week. They will remain fresh for up to 5 days if sealed properly.

Who said breakfast had to be boring!
