Peanut Butter Chocolate Fat Bombs

Since we started this “KEPA” journey, I’ve been trying to find new ways to cut carbs and sugar while satisfying our sweet tooth! My husband and I are always up for Reese’s peanut butter cups. Taking this into consideration, and looking into different recipes and how to cut carbs without impacting our taste buds, I came up with a little something that tastes amazing!

This recipe can be achieved in 3 easy steps… and a little time!

Step #1

Line a 24 mini muffin tin with mini liners… that’s all! Quite easy!

Step #2

In a large measuring cup ( I use a 2 cups) – make sure it’s a measuring cup, it will be easier to pour your peanut butter mixture in the liners, mix together:

  • 2/3 cups of smooth peanut butter
  • 1/4 cup of melted coconut oil… now I know what you are thinking but trust me!

Mix you peanut butter and coconut oil together until you get a smooth texture.

Immediately fill your muffin liners with the peanut butter mixture.

Set aside, in the fridge, for minimum one hour.

Step #3

After waiting for your peanut butter to set, in a 1 cup measuring cup, melt 1/2 cup of dark chocolate (around 20 pieces) with 2 Tbsp of coconut oil. Pour over your peanut butter.

Now, the difficult part starts… WAIT minimum 5 hours or overnight before diving into these filling peanut butter chocolate bombs!

Looking for a sweet treat? You need a middle of the afternoon pick-me up? You are simply looking for a quick and easy thing to bring to a gathering (ensure that no one is allergic to peanuts)? This is a quick , easy and very satisfying treat!

You’ll just have to resist the temptation to eat them before the wait time is up!

Who said that watching what you eat had to be boring? Go ahead, eat them up!
