Turmeric Wild Rice Chicken Soup

Summer is over, school is in session… the cold weather is slowly coming.  In this household, cold weather = soup time!  Hot and comforting, soup is a good alternative to replace a complete meal.  As long it is filled with good stuff and fulfilling.  This is exactly what you will get with this soup!

The basis to start off this recipe is similar to my Chicken Stew.  Let’s face it, a good soup is all in the broth.  Taking the time to let this chicken simmer is what makes the base of your soups taste.

In order to make this soup, you will need:

  • 8 pieces of upper chicken thighs
  • 1 Tbsp of butter
  • 2 celery sticks, sliced
  • 2 carrots, sliced
  • 2 small onions (1 big), chopped
  • 4 cloves of garlic, chopped
  • 2 Tbsp of chicken powder base
  • 1 Tbsp of Turmeric Powder (keep an eye open for blog on Turmeric)
  • 3/4 cups of Wild Rice (I used a mix of Wild Rice and Long Rice)
  • 10 cups of water
  • Salt & Pepper to taste

Using a large saucepan, melt the butter.  Add your onions & garlic and cook for a few minutes.  Add your chicken powder base along with 8 cups of water.

Drop your chicken in the chicken base broth and bring to a boil.  Let simmer at medium heat for a full hour.

Remove chicken from the broth and set aside.  Add your 2 remaining cups of water.   You can now add in your turmeric powder.  Mix well before incorporating any other ingredients.

Once well combined, add your celery, carrots & rice.  Bring to a boil.

While you are waiting for your soup to boil, prepare your meat.  Just like my Chicken stew, you do not want to add any of the skin to your soup.  You also want to ensure that no bones makes its way to your soup. For the chicken, instead of using a knife to cut in pieces,  I prefer to shred it in pieces using my hands.  Once you are done with the chicken, add it to your soup and stir to incorporate all the goodness together!

Let the soup simmer for 20 to 30 minutes, making sure you stir it on occasion to prevent the rice from sticking at the bottom.  Once done, remove from the heat and let rest for a few minutes.
