Prep Day #42 – Spiralizer… a fun way to eat veggies!

For the longest time, my husband didn’t want to eat any zucchinis.  He simply didn’t like it!  No taste, the texture, everything about zucchini just did not appeal to him.  So, I would simply not buy any… even if I did like it!  All that changed the day I got my spiralizer!

This little machine is a beauty to make all sorts of veggie noodles.  Not only are you cutting down on the carbs, but you are gaining a lot of vitamins & minerals.   It also makes several variety of salads.  Who wouldn’t like a spiral veggie salad?

For some of this week’s lunches (and tonight’s meal) I made a variation of zucchinis & carrots. Once will be served with spicy chicken. The other with slices of grilled steak. Tonight, I stuffed chicken with tomato sauce, oregano & loads of mozzarella cheese… it was like having chicken Parmesan over spaghetti, except that it was veggies.

The Machine

If there is one gadget I recommend for your kitchen, it’s that one!  I do not endorse a brand in particular.  I did a lot of research regarding durability, versatility & size and the one I got is making me happy so far!

To make work this spiralizer is easy… cut your vegetable in half, stick to the machine and twirl away!

Zoodles

You can ”spiralize” most veggies:

  • zucchini
  • carrots
  • cabbage
  • potatoes
  • red onions
  • cucumber
  • … just to name a few I tried

Is it time consuming?

Noooooo!  From start to finish, I prepared my veggies for lunches & tonight’s meal in less than 15 minutes.  The other great thing is that cooking them is also very fast.  On my end, I love to roast the veggies in a little bit of oil & melted butter.

Ensure you let your skillet of butter & oil warm up before you add your veggies.  This will prevent them from becoming soggy.   Add a some seasoning… I added salt & pepper.

Do not let the zoodles sit in the pan once they are ready.  Take out and plate or store immediately.  This will keep the freshness of the veggies.

Spicy Chicken Zoodles

Who ever said that eating vegetable is boring does not have access to this little beauty of a machine!  Go ahead, get one… you won’t regret it!
