Protein… when you are a meat eater, you feel that you went around the possibilities quickly! Beef, chicken, pork & fish… we did full circle. What about tofu? TOFU? NO WAY!!!! Not only does it have a weird texture but it is tasteless! It won’t be if you marinade it and add it with the proper textured ingredients. You are in luck because I have just the recipe for you.
Using soft tofu, cut it in 1 cm by 1 cm squares and set in a glass bowl. In separate measuring cup, mix together the following:
- 1/2 cup of Olive Oil
- 1/3 cup of Balsamic Vinegar
- 2 Tbsp of Dijon Mustard
- 2 Tbsp of Honey
- 1 clove of garlic
- Salt & Pepper
Pour 3/4 of the marinade/vinaigrette on the tofu and mix well. Refrigerate overnight.
In a large bowl, mix baby spinach and your tofu. Using fresh mushrooms, slice around 10 – 12 mushrooms and roast them in a little bit of olive oil. Once roasted, add to your spinach & tofu. Mix well.
Last step, roast some nuts. You can easily use some almonds or pecans. In my case, I used some pine nuts due to their more earthy and oily nature. Do not add the nuts directly to the salad.
Separate your salad into plates, top off with the roasted nuts and drizzle with some of the left over marinade/vinaigrette.
One word… AMAZING! This protein filled meal will get you to eat something other than meat!
