Prep Day #41 – Stuffed Chicken

IT’S SPRING!!!  Finally… it seemed like it would never arrive.  Usually, Sunday is reserve for prepping and prepping only!  Since it was so nice outside, I decided to wash my windows (outside and inside) and put my screens in so we can  enjoy some fresh air!  The guys were taking down the temporary tempo garage.  It was a very busy Sunday!  With all that work, this calls for a hot, fulfilling meal… why not stuff chicken with some good stuff!

There are 2 things I love more than anything in life… being in my kitchen cooking and being outside.  I surely got my money’s worth today!  Once I got finished cleaning the windows, I swung open  the back patio door and enjoyed the birds signing.  I looked over my weekly menu and the plan I put forth only calls for me to marinate my tofu (I’ll share this with you tomorrow).  I thought to myself, great… I’ll have time to make a great Sunday evening meal for the guys!  The ultimate question, what should I make?

Yes, you read right, I asked myself what should I make?  It does happen that the planning put forth does not quite work out as planned.  This was one of these cases.  I had 3 boneless chicken breast that needed to be cooked.  Why not make something with these?  What do I have in the fridge?  After a long look, this came out to be a LaBrayonne’s exclusive…

Using things I had on hand, I took out:

  • 1 cup of baby spinach
  • 8 Sundried Tomatoes
  • 3/4 cups of shredded Mazorella
  • Dry basil
  • 3 boneless chicken breast
  • 1 cup of seasoned bread crumbs

First off, I chopped my spinach and tomatoes in slices.  This will make it easier to roll the chicken.

Second, line a baking sheet with some foil and top with a cooking rack.  Ensure that you oil the rack to prevent chicken from sticking.

Using a sharp knife, cutlet your chicken in half.

Using plastic wrap under and on top, flatten your chicken… this will help to stuff it and ensure even cooking.

Season chicken with salt, pepper and your basil

Add your filling, starting with the cheese, and roll.

Using some toothpicks to ensure your chicken stays close during cooking.  Once your chicken is well secured, roll in the breadcrumb and set aside on cooking rack.

Spray evenly with a light coat of cooking oil… this will help the breadcrumb to become golden brown.

Cook in a 350 F pre-heated oven for 45 minutes.  While cooking, prepare your side dish.  For this evening,  I made simple buttery mashed potatoes.

Once your chicken is cooked, ensure your remove all of the toothpicks… last thing you want is to have someone bite on a toothpick!  In a few simple steps, you have a complete meal.

The best part of this chicken is getting to enjoy the cheese goodness in the middle… they’ll be asking for more!

Who said that giving your family a WOW meal was difficult?  It’s simple… just use your imagination!
