Interesting side dishes are always fun! The traditional veggies, salads, potatoes or rice tend to get boring after a while –unless you pimp them! On occasion, I love to make couscous. However, couscous is blend and lacks taste… reason why I add a whole bunch of goodness in mine!
I use different things to make couscous interesting. However, you can give lots of flavor with less ingredients. This is why this couscous uses only 5 ingredients (one being the couscous).
To make this tasty couscous, you will need:
- 1 cup of Couscous (medium)
- 15 pieces of Sun-dried tomatoes (in oil)
- 3 green onions
- 1/2 tsp of dried thyme
- 1 Tbsp of Bovril Chicken Concentrate
To start, chop your greens onions, separating the white from the green. You then want to chop your tomatoes and set aside.
Add your 1 Tbsp of Bovril concentrate to 1 cup of warm water. Mix well to dilute the concentrate properly.
Using a medium saucepan, add the oil from the tomatoes and stir in the white portion of your green onions. You want to use mild heat in order not to burn them.
After a few minutes, add your chopped sun-dried tomatoes and thyme and stir with the onions.
Stir for 2 minutes. Before adding your broth, stir in the rest of the green onions.
Stir in broth and bring to a boil
Once it is boiling, remove from heat and add your cup of couscous.
Make sure that you mix it very well… this will prevent from having any couscous coming out dry.
Cover and forget about it for 10 minutes.
After time is up, fluff the couscous mixture with a wooden spoon.
Voila, you now have a hot side dish to serve with chicken, beef, fish or whatever your heart desires. You can also put it in the fridge and serve as a cold couscous salad. Either way, this dish is simply amazing and only takes around 20 minutes to make (10 min prep & 10 min rest time).
