With life rolling at full speed, it’s easy to turn to sugar filled snacks simply because they are at hands reach. We are trying to cut down on refined sugar and it’s easier said than done! So, to keep our hands away from the pre-packed snacks, I decided to make my own.
Nuts are a great way to cut the mid-afternoon cravings. Add some dark chocolate it you have the sweet factor taken care off.
To make these you will need:
- 1 1/4 cups whole raw cashews
- 1 1/4 cups whole raw almonds
- 1 cup chopped raw pecans
- 1 cup chopped raw walnuts
- 1 cup raw pumpkin seeds
- 1 cup Coconut Sugar (stay away from refined sugar)
- 1/3 cup of Honey
- 1 Tbsp of vanilla
- 2 tsp Kosher salt
- 1 tsp cinnamon
- 1 – 80g 75% dark chocolate bar
To begin, preheat you oven to 350 F. Using parchment paper, line a 9×13 baking dish.
Mix together all of your nuts. In a separate sauce pan, put your coconut sugar, honey, vanilla , Kosher salt and cinnamon. Using low heat and stirring constantly, bring sugar to simmer and let dissolve. Pour sugar mixture on the nuts and mix well to coat nuts evenly.
Once your nuts are evenly coated, pour into the prepared baking sheet. The mixture will be very sticky so use a piece of wax paper or a wooden spoon to press the mixture firmly together.
Bake on the center rack for 25 – 30 minutes. Remove from oven and let cool completely (minimum 1 hour).
Once the bar is fully cooled, cut into small bars or fun bite size portion. I managed to make 12 bars. Drizzle your melted dark chocolate on top. Put in the fridge to keep the bars fresh.
