Prep Day #32 – Peanut Butter Chocolate Chip Cookies

We are halfway through January and for a lot of us, the resolution was to either eat right or lose weight.  It’s difficult to maintain this resolution with the cravings for carbs and sugar.  We all love sugary treats!  How is it possible to  satisfy a sweet tooth without having a huge amount of refined sugar?  By using naturally sweet ingredients!

We love cookies!  They are easy to make and can easily satisfy a sweet tooth without guilty feeling of having consumed a large quantity of calories.  This is why I am sharing this quick and easy recipe.  This recipe usually yields around 20 cookies.

To make these you will need:

  • 1 cup of creamy Peanut Butter
  • 1/2 of golden brown sugar (we need a little bit of sugar)
  • 2 tsp of vanilla
  • 2 eggs
  • 3/4 cups of oats
  • 1 tsp of baking soda
  • 2/3 cups of Chocolate Chips

You read right, no flour – BONUS, less carbs!

  1. Pre-heat your oven at 350 F.
  2. Mix your oats and baking soda together and set aside. 
  3. In large bowl, beat together your peanut butter, brown sugar, vanilla & eggs.  The use of a handheld electric mixer will certainly make this part easier.  
  4. Using a rubber spatula or a wooden spoon, mix in your oats and chocolate chips.  It is normal that your batter seems oily & sticky… Peanut oil!

Using a cookie scoop, scoop mixture directly on your cookie sheet.

Bake for 10 -12 minutes (time may vary according to your oven) until the edges are golden.  Let sit on your cookie sheet for a few minutes before trying to transfer them on the cooling rack.  Manipulating your cookies too soon could cause them to break.

Store in a airtight container… this will keep your cookies soft & moist longer

With a coffee or a large glass of cold milk, these cookies will take care of your sweet tooth craving.  They will also get eaten fast… I know they will in my household!

For variation, you could also add some chopped walnuts.  Enjoy!
