Prep Day #29 – Parmesan Chicken Lasagna

How to feed several  people and get a ”WOW” effect with not too much work? Combine 2 dishes that marries well together.  We all know that Chicken Parmesan goes great with spaghetti… what if we add the crusted chicken to lasagna?

I love receiving friends over… even better when these friends are your neighbors.  We had planned to finalize our Tempo garage in the last few weeks but life is going by so fast that other responsibilities took over and we pushed that task to the very last minute.  With the snow this morning, it was clear that today was the day the temporary Winter garage would go up.  While the men are working outside, I am cooking up this dish of comfort food in my kitchen (among other things).

To make this, you will need:

  • 3 boneless Chicken breast
  • 1/2 cup of bread crumb
  • 1/2 cup of flour
  • 2 eggs
  • 12 lasagna noodles
  • 2 jars of Marinara sauce
  • 1 cup of Parmesan cheese
  • 2 cups of Mozzarella
  • 1 cup of Ricotta cheese
  • 1 green onion chopped
  • Salt & Pepper

Cook your noodles halfway through.  This  will help them cook better once you will have built your lasagna.  Once they are cooked, drain and put in ice water.  This will help the cooking process to stop.  Drain again and set aside.

Using a sharp knife, slice your chicken breasts in the middle sideways. You will end up with 6 chicken cutlets.  Using a kitchen Meat Tenderizer, pound your chicken in between saran wrap to make them flat.

Once your chicken if flatten, dip in 1 beaten egg, then flour and then bread crumb.  Do this for all of your chicken cutlets.

Cook them 5 minutes per side in a pre-heated oiled skillet.

While your chicken is cooking, mix together 1 egg, the ricotta cheese and the green onion. Set aside.

Once your chicken & pasta are cooked, you are not ready to build your lasagna.

First row –  Marinara sauce, 3 pasta, 3 chicken cutlets, sauce, Parmesan cheese and some Mazzorella.

Second row – 3 Pasta & half the ricotta mix.  Spread over the pasta

Third row – 3 pasta, sauce, 3 chicken cutlets, sauce, Parmesan, Mazzorella

Last row – 3 pasta, remainder of ricotta mix, sauce and the rest of the cheese.

Cook in a pre-heated 350 F oven for 45 minutes.

Let rest for 10 -15 minutes before serving.

Serve with bread and Cesar salad for a complete meal.  This meal goes well with white or red wine. It is even better when served with friends!
