Prep Day #28 – A look back at Chicken Week

For those of you who follow me on Facebook, you got to see 5 different meals prepared with 2 chickens I cooked last Sunday.  I also shared a bonus chicken meal yesterday!  I thought I would share with you a look back on this week’s chicken meals and the approximate cost for this week’s meals.

I love shopping at Costco for my meats.  We all try to save some money and food can get quite expensive.  My family is not different from other families… I run after deals!  I thought for this week’s meal plan that I would try to push my budget to the max.  So, I bought a bag of 3 chickens for 26.98$ (and other things).

If I round this up to 9$/chicken and cooked 2 for chicken week, that comes at a total of 18$ for my main protein for the week.  Not bad so far.  However, I still need to add other ingredients to make these meals.  What else did I use this week:

  • 1/2 box Penne pasta – 1.12$ (2.25$/box)
  • Cream of chicken soup (2 cans) – 1.25$/can
  • Cream of mushroom soup (1 can) – 1.25$/can
  • Tortilla bread (3) – 0.90$ (2.99/10)
  • Can of peas (1 can) – 11.75$/12 can – 0.98$/can
  • 5 Lbs potatoes – 2.99$
  • 5 Lbs carrots – 1.50$ (I get 2 x 10 Lbs at Costco for 5.99)
  • Fresh white mushroom – 1.99$
  • Bacon – 1 pack – 4.75$ (4 pack for 18.99$ at Costco)
  • 1 tomato – 0.99$
  • 1 loaf of bread – 2.09$ (3 loafs for 6.09$ at Costco)
  • 1 pack of mixed salad – 2.99$ at Costco
  • 1 red pepper – 1.00$ (5.99$/ 6 peppers at Costco)
  • 1 apple – 0.75$
  • 1/2 cup of Dry Cranberries – 1.25$ (4.99$/bag)
  • 1/2 cup of chopped walnuts – 3.11$ (9.99$/bag)
  • 1 small red onion – 0.99$
  • 1 large yellow onion – 1.25$

Of course, I used several things that were available in my pantry such has olive oil, apple cider vinegar, poppy seeds, dry onions, etc…

Several of the things mentioned above I already had on hand.  When we see something that is at good price, we stock up… especially if it is canned goods or something with a long expiration date.

If we do the math, I managed to cook for 5 days, 2 meals/ day, for 3 people at a total cost of 41.15$.  Let’s say I round this up to 50$ for the week if I take in consideration the snacks (fruits) and the things used in my pantry.  That rounds up to 3.33$/person/day… not too bad!

How did that menu look like? Here is a sneak peak:

Monday

Autumn Salad

Tuesday

Chicken Wrap – Fajita Style

Wednesday

Chicken Pot Pie Sauce Penne

Thursday

Chicken leg in mushroom cream – over potatoes

Friday

Club Sandwich – screams Friday!

Not too bad, right?  I was worried at first… chicken for 5 days!  Thought that the men in my life (husband and son) would get tired of chicken, but they didn’t.  The fact that it was served differently every evening made it easy!

Go ahead and let your imagination go and take full opportunity of what is on special… your wallet will Thank you!
