Prep Day #23 – Pizza Casserole

Who doesn’t love pizza? So many topping choices, savory sauce and bubbly cheese… oh pizza!  Think or thin crust, pizza is the #1 food selection for parties and when receiving to watch the game.  It is good hot or cold.  Oh yes, pizza!

I love pizza!  However, I don’t find it convenient for lunch packing.  I am never able to find a container big enough to hold a full slice so I end up cutting it. Also, let’s be honest, who would only have one slice?  Reheating pizza when you have slices one over the other is not the best! How can you have your pizza and bring it for your lunch?

Here is a way you can have full pizza taste without the hassle of not having it fit into a lunch container.  Pizza casserole!

To make this casserole, you will need:

  • 1 bag of medium egg noodles
  • 2 cans of pizza sauce
  • Shredded Mozzarella cheese
  • Your choice of toppings – I am doing:
    • Bacon (we love bacon at our house)
    • Pepperonni
    • Red & Yellow Bell Peppers
    • Onions

Simple ingredients… full pizza taste!

Start by cooking the egg noodles according to package.  While the noodles are cooking, prepare the rest of your ingredients (shred your cheese, chop your veggies and meats).  When your noodles are cooked, put in the bottom of your casserole.

 

Mix in 1 can of Pizza sauce.  Set aside.  In a medium skillet, start off by cooking your bacon.  Once halfway, add your veggies and the pepperoni.  Do not over cook, you simply want to have them tender and for your bacon to be pre-cooked.

Add to the top of your noodles the second can of pizza sauce.  Top off with toppings and sprinkle with your cheese.

Sprinkled a little bit of Oregano on top of the cheese!

Put in a 350° oven for about 30 minutes.

Volia, the taste of pizza in a casserole.  Easy meal for the complete family, for when you have a group of people or to pack in lunches… Enjoy!
