Prep day #7 – Salmon patties… as good as cake!

Easter means time with Family!  I am in my Hometown of Edmundston this weekend and today, I get to cook with my Mom in my Sister’s Kitchen – did I say that Easter means time with Family!

My Family is Catholic and today being Good Friday, we aren’t allowed to eat Meat… but we can eat fish!

Fish can become dull very quickly.  You can always marinade it but it remains a piece of fish. This is why today, I am making (with my Mom) my Salmon cakes.  It’s a Salmon patties filled with veggie goodness.

To make these you will need:

  • Salmon – the size depends on how many patties you want to make.
  • 4 green onion
  • 1 medium size pepper (red, yellow or orange – or all 3)
  • 1 cup of breadcrumbs (I am using the Italian mix for extra herbs and spices)
  • 2 eggs
  • 2 Tbsp. of Dijon Mustard
  • 1 Tsp. of dry Thyme
  • Salt and Pepper
  • 1 Tbsp. of dry Parsley
  • Extra Virgin Olive Oil
  • 2 Tbsp. of Butter

First off, you want to season your Salmon using the salt, pepper and the dry Thyme.  You then bake it in a 350° F oven until fish is flaky.

Once your Salmon is cooked, let it cool.  During that time, prepare the rest of your ingredients.  In a large mixing bowl, put your chopped green onions, chopped peppers and parsley.  Using a fork, flake your fish.  Once complete, add the fish with the veggies.  Mix well.  You may want to add a little bit more salt and pepper.

Once this first mixture is well combined, add your breadcrumbs and the eggs.  Using your hands (please wash them before), mix the breadcrumbs along with the eggs to the fish.  If the fish is sticky, that is great, it means you have the perfect consistency.  If you find that the mixture is dry, add an egg… it can depends on the amount of fish you have used.

Now, make your patties.  You can make them small (great for bite size appetizers) or medium.  I like to make them medium and around 1 ½ ‘’ thick.

Heat some Virgin Olive Oil and the 2 Tbsp. of butter in a large skillet pan.  Cook each side of the patties until they are crispy on the outside (around 5 minutes per side).  Using a large plate, put the cooked patties over a layer of paper towel.  This will help soak up the left over oil/butter mixture from the top of the patties.

You can serve with either a salad, French fries or some vegetables.

Voila, a fish meal that will leave you wanting more.  Crispy on the outside but so fluffy on the inside.  They are as good as cake!
