Prep day #6 – Lunches

I usually prepare the weekly evening meals and rarely prepare lunches during prep day. In the last few weeks, I noticed that on Wednesday evening, all the food that I had prepped was already gone.  I needed to rethink my planning!  So this weekend, not only am I focusing on evening meals (3 evenings) but I am putting a special attention to lunches!

Productive afternoon

This is also a good opportunity to clean out the fridge and the pantry. After going through what I had on hand, I managed to do quite a lot. In less than two hour I did:

  • 4 cold cuts wrap (2 without cheese for my daughter)
  • 1 Sheppard pie – 4 servings (Kid’s favorite in their lunch box)
  • 3 boneless chicken breasts (for lunch salads)
  • 12 chicken drumsticks (Tuesday evening’s meal)
  • 8 mini meatloaf (Monday evening’s meal)
  • 4 bags of veggies
  • 6 bags of grapes
  • 4 Mild Italian Sausage brochettes (for tonight’s meal)

 

Portion size is fantastic!
…only thing to add is veggies
Add BBQ sauce when heating up for a delicious meal
Boneless chicken 3 ways – basil pesto, salt pepper and Montreal Chicken spice– 3 salads that will be good this week
…because we have to eat tonight!

A few hours of work today will give the opportunity to have some “me” time in the beginning of this week (like going for a massage)! Having these meals prepared will not only save me time in the evening but sure will save me time in the morning.  Open the fridge, grab a few things, pop in the lunch box and voila!  Less stress!

Don’t get me wrong, there are some Sunday’s that I don’t feel like prepping. Once I walk in my kitchen, I feel motivated because I know the time I will save during the week.  In the end, what I like the most, is to be able to sit down after all that hard work, I admire what was accomplished!

Mmmmmm, good!
