Warm Goat Cheese Salad

Now, this recipe is quick & simple.

First off, for the salad, there are no guidelines!  You simply build any leaf salad you wish to serve.  I usually use baby spinach and add on anything I have in the fridge & in the pantry– nuts, peppers, red onions, olives, avocado…

The star of this plate is the goat cheese!!!!

For a dinner for 2, you will need only 4 main ingredients:

  • 300g package of soft Goat Cheese (I get the double pack at Costco)
  • 1 egg
  • 1/2 cup of bread crumbs
  • Olive oil

Separate the goat cheese in 4 equal sections.  Beat your egg in a bowl and put your breadcrumbs in a plate.

Then you dip, roll, dip & roll…  get ready to get your fingers dirty!

  • Dip in egg
  • Roll in crumbs (ensure your cheese is all covered)
  • Dip in egg
  • Roll in crumbs

Using a small cast iron pan or sauce pan, pour olive oil to ensure you are covering the complete bottom of the pan.  On medium heat, cook each side of your breaded cheese until it is golden brown.  Once all sides are cooked, simple remove on a paper towel lined plate.  Add olive oil and balsamic vinegar to your salad and garnish with 2 patties of cheese per plate!  Voila, amazing dinner for 2 that is quick, easy and will surely melt his/her heart!

Why not make it an entree?

This recipe also serves well as an entree if you are receiving guests.  Simply serve 1 cheese patty per guest along with a sun-dried tomato pesto.
