What do you need?
- 1 pound ground turkey
- 1/2 cup broccoli florets (boiled for 3 minutes)
- 1 cup kale
- 1 carrots
- 2 tbsp dry parsley
- 1 tsp oregano
- 1 egg
- 1/4 cup of bread crumbs
- 2 cloves of garlic
- salt & pepper, to taste
What do you do?
- Preheat oven to 400′ F & line your baking sheet with parchment paper
- Using a food processor, chop all vegetables, including the garlic, together. Transfer to a large bowl
- Add your turkey to the vegetables along with your herbs, egg, bread crumbs, salt & pepper. Mix well together to combine.
- Start rolling!! Depending on the size of meatball you would like, with this recipe, you can do around 30 small or 12 large meatballs. I decided to go with the large meatball with a ratio of 2 per servings.
- Bake for 30 minutes, until baked through and slightly golden (for the small meatballs, cook around 20 minutes)
Serve with gravy & cranberry stuffing (if you are in the mood for a Holiday taste) or again with Marinara sauce over pasta.
