Roasted Red Pepper Hummus

  • 1 large can of chickpeas
  • 4 cloves of garlic
  • 2 Roasted Red Pepper (you can roast your own –I used canned in oil)
  • 3 Tbsp of Tahini
  • 2 Tbsp of lemon juice
  • 1 Tbsp of Water
  • 2 Tbsp of Olive Oil
  • 2 tsp of Balsamic Vinegar
  • 1/2 tsp of Paprika
  • Pinch of Kosher Salt

Using a food processor, blend together all ingredients, except for the chickpeas, at high speed.  Once everything is properly blended, add your chickpeas and blend at high speed.  That’s it!

Depending on the texture you want, you can add more Tahini (for creamier), more water (for thinner) or simply a dash of extra Olive Oil.

You can garnish with chopped red pepper, paprika and some parsley.

Serve with veggie sticks & toasted tortilla bread.
