Apple Oat Muffins

  • 2 Bananas (or 1 cup of applesauce)
  • 2 Eggs
  • 1 Apple
  • 1/2 cup of Honey
  • 2 1/2 cups of Oats
  • 2 tsp Baking Powder
  • 1/2 tsp of Baking Soda
  • 1 tsp of Cinnamon
  • 1/2 tsp Salt
  • 2 tsp of Vanilla
  • 3/4 cup of Milk

These are easy to make but contain several steps!

Step 1:  Roast your oats in a 375 F oven for about 5 minutes.  Let them cool completely before proceeding.  Keep your oven open at 375 F

Step 2:  Using a blender or a magic bullet, grind down 1 1/2 cup of oats to a flour texture.  Set aside.

Step 3: Using blender or magic bullet, blend your bananas –you want to make sure you will have no lumps

Step 4:  Let’s make MUFFINS!

In large bowl, mix together the blended bananas, eggs, honey, vanilla & milk.  Then add your dry ingredients in this exact order: oat flour, 1 cup of roasted oats, baking powder, baking soda, cinnamon, salt.

You will find that the mixture is very liquid –that is perfectly normal.  Let your mixture rest for 15 minutes.  This will help the oats to soak up the liquid.

In the meantime, chop your apple in fine cubes.  You don’t want to have big pieces as they will not have a chance to cook through.  Mix in your apple cubes with your mixture – you will have noticed that the texture is now ticker.

Now, I would recommend to use muffin liners.  However, I did and noticed that since there is no oil in this recipe, the muffin tend to stick to the liner paper.  If you want to have a nice, even muffin, when I will redo this recipe, I will use a non-stick muffin pan and lightly spray it with some PAM.

If you wish, you can top your muffins with some loose oats.  Cook the muffins for 23 to 25 minutes in your 375 F oven until an inserted toothpick comes out clean.  Let them cool down before storing them into an airtight container.

Gluten free, oil free, refine sugar free… these muffins make me happy!
