Even though we had some nice warm weather in the last few weeks, winter is not done yet. The last few days were very cold and called for a very hot comforting meal. This is why I decided to make a slow cooker Chicken Pot pie soup. Tastes like chicken pot pie filling minus the crust.
Comforting, this recipe is hearty and will fill you up with simply one bowl. In order to make this you will need:
- 1 1/2 – 2 pounds of boneless chicken breast (depend on how meaty you want it)
- 6 strips of bacon
- 1 large onion
- 3 cloves of garlic
- 3 1/2 pounds of russet potatoes
- 1 cup of chopped celery
- 1 cup of chopped carrots
- 1 cup of small frozen peas
- 7 cups of chicken broth
- 1/2 tsp of dry thyme
- 1/2 tsp of parsley
- 1 tsp of salt
- 1/2 tsp of freshly cracked pepper
Start by chopping your onion, garlic & set aside. Next, slice bacon in small strips. In hot pan, cook bacon. When halfway cooked, throw in onion & garlic. Cook until onions are translucent. Put mixture in the bottom of your slow cooker.
Put chicken breast over mixture. Top with the potatoes, celery, carrots, thyme, parsley, chicken broth, salt & pepper. Set to high for 8 hours and forget about it for the next 5 hours.
After 5 hours, check on your chicken breasts… they should be cooked to the point of shredding easily. Let them cool, cover with plastic wrap and put them away in the fridge. Let the rest simmer for 2 hours.
With 1 hour left on the timer, add peas. You may also start mashing your potatoes. Periodically every 15 minutes, mash potatoes in mixture. This will cause the broth to thicken. When you get to 15 minutes left on the timer, add your shredded chicken to warm it up.
This soup tastes awesome and makes it seem like you have spend the whole day in the kitchen when in reality, it’s the slow cooker that did all the work for you. For additional goodness, add some shredded cheese on top.
Nothing beats the winter cold like a hot steamy soup. Feel free to add also a baguette or croutons. The possibilities are endless. In the end, what makes it better is to be able to share it with friends & family!
