Veggie Turkey Meatballs

What do you need?

  • 1 pound ground turkey
  • 1/2 cup broccoli florets (boiled for 3 minutes)
  • 1 cup kale
  • 1 carrots
  • 2 tbsp dry parsley
  • 1 tsp oregano
  • 1 egg
  • 1/4 cup of bread crumbs
  • 2 cloves of garlic
  • salt & pepper, to taste

What do you do?

  1. Preheat oven to 400′ F & line your baking sheet with parchment paper
  2. Using a food processor, chop all vegetables, including the garlic, together.  Transfer to a large bowl
  3. Add your turkey to the vegetables along with your herbs, egg, bread crumbs, salt & pepper.  Mix well together to combine.
  4. Start rolling!!  Depending on the size of meatball you would like, with this recipe, you can do around 30 small or 12 large meatballs.  I decided to go with the large meatball with a ratio of 2 per servings.
  5. Bake for 30 minutes, until baked through and slightly golden (for the small meatballs, cook around 20 minutes)

Serve with gravy & cranberry stuffing (if you are in the mood for a Holiday taste) or again with Marinara sauce over pasta.
