- 4 Russet potatoes (cut in cubes)
- 4 green onions
- 1/4 cup Olive oil
- Salt & Pepper to taste
Using a large skillet, heat up half of the Olive oil and add your potatoes. Sprinkle some Salt and Pepper. Turn potatoes to ensure they are all coated by the oil. Let the potatoes sizzle and stir every 5 – 10 minutes. Add the remaining oil if needed. Last thing you want is for your potatoes to stick in the bottom of your pan.
Chop your green onions finely and set aside. Once your potatoes are nicely roasted and have a crispy crust, add your green onions and mix well. Take off the heat. Add more salt if you desire!
These potatoes are great with steak, chicken, pork… and even breakfast!!
