Prep Day #30 – Vietnamese Soup

The Holiday Season is over, and it was great to get to spend time with Family.  It was also nice to be able to spend time with my Mom in the kitchen.  That is what the Holidays are all about – Food & Family!

Now, it’s back to normal in my household and we need to get our regular routine on track.  Nothing says routine like prep day!  With the cold weather hitting us hard since 2018 started, I have decided to make some comfort food for my family.  The Individual bacon wrapped meatloaf are always a big hit and a hot soup is always a winner in lunches.

My Son loves food inspired from Asia.  The Chicken Chow Mein  is one of his favorite.  I am sure he will enjoy this Vietnamese inspired soup I will be making during my Prep Day.

This soup is fast to make and offers an abundance of flavors.  To make it, you will need:

  • 1 Tbsp of Olive oil
  • 1 large onion, chopped
  • 1 tsp of ground ginger
  • 1 garlic clove
  • 1/2 tsp of ground pepper
  • 1/4 tsp of cinnamon
  • 3 cups of water
  • 2 cups of chicken broth
  • 2 tsp of Beef bouillon powder
  • 2 large carrots,  grated
  • 1 Lbs of beef – I used a steak and sliced it thinly (you can also use beef fondue meat)
  • 3 green onions, julienne
  • 3 Tbsp of fish sauce (or 1 Tbsp of Oyster sauce as a substitute)
  • 1 Tbsp of lemon juice
  • Noodles (rice noodles, Ramen noodles… noodles)

In large pot, heat your olive oil and add your onions.  Let them cook, stirring often (you don’t want them to burn) until they have softened.

Stir in your ginger, garlic, pepper and cinnamon.  Your kitchen will fill up with a beautiful spice smell.  Immediately stir in your water, chicken broth, beef bouillon powder and your carrots.  Let simmer for 15 minutes.

Cooking Tip  – To be able to slice your steak thinly, freeze it first.  It will be easier to manipulate the meat to slice evenly. The thinner it is, easier it will cook in the broth.

Remove from heat and stir your sliced beef, julienne green onions, fish sauce and lemon juice.  You will see the beef cook instantly in the hot broth.

Serve over cooked noodles.  You can add a few chopped green onions for presentation.

This soup will most definitely warm up your body… and soul!  With all that meat noodles & veggies, this soup is a complete meal.  Enjoy!
